Ingredients: 4 ounces of penne pasta
3 ounces (or about half a package) of baby spinach leaves
1 cup of grape tomatoes cut in half
½ a can of red kidney beans
½ a cup mozzarella balls cut in half
Olive oil or Italian salad dressing
Directions:
- Cook pasta as directed on back of package. Drain well.
- Slice tomatoes and mozzarella cheese in half.
- Pour cooked pasta, tomatoes, mozzarella cheese, baby spinach leaves, and kidney beans in a large bowl. Sprinkle desired amount of either olive oil, or Italian salad dressing and mix well.
- Enjoy chilled or at room temperature!
