Penne Pasta Salad

This recipe is for 4 servings of Penne Pasta Salad, but feel free to adjust how much pasta you cook and how many ingredients you add to suit your taste!


 

Ingredients:    4 ounces of penne pasta
                       3 ounces (or about half a package) of baby spinach leaves
                       1 cup of grape tomatoes cut in half
                       ½ a can of red kidney beans
                       ½ a cup mozzarella balls cut in half
                       Olive oil or Italian salad dressing

Directions: 
  1. Cook pasta as directed on back of package. Drain well.
  2. Slice tomatoes and mozzarella cheese in half.
  3. Pour cooked pasta, tomatoes, mozzarella cheese, baby spinach leaves, and kidney beans in a large bowl. Sprinkle desired amount of either olive oil, or Italian salad dressing and mix well.
  4. Enjoy chilled or at room temperature!
